Instead, reuse the pot roast or preserve it properly to reuse later on. Several options for using the pot roast give you a wide variety of solutions for your leftovers. Freezing for Preservation
Separate the meat and gravy from any vegetables that you cooked with the roast. Place the meat into freezer-safe storage bags or plastic containers and the gravy into a separate bag or container. The freezer will prevent the meat and gravy from spoiling indefinitely, but the taste will be best if you use them within 2 to 3 months. Vegetables that have been cooked with the roast when it was raw should be discarded after the meal, as they may still hold some raw meat juices.
Pot Roast SandwichesReuse the leftover meat and gravy from the pot roast to make sandwiches for the following day's lunch. Simply refrigerate the leftovers until lunch time. Cut slices of the meat to use over bread and other sandwich toppings. To make a hot open-faced sandwich, toast two pieces of bread and lay them flat on a plate. Heat the roast in a microwave or baking dish and place slices of the roast over the bread. Pour hot gravy over the entire plate.
Pasta SaucesUse your meat to create a creamy or red sauce for pasta dishes. Place the gravy and slices of the meat into a saucepan and simmer it with sour cream to make a creamy meat sauce for pasta. Likewise, you can leave out the gravy and add chopped up pieces of the beef to tomato sauce and spices to use on cooked pasta or in baked pasta dishes such as baked ziti or lasagna.
Barbeque BeefShred the leftover beef and add it to a pot of simmering barbeque sauce to allow the meat to soak in the barbeque flavor. Layer the barbequed meat into a casserole dish and pour cornbread batter over it to create a summer picnic casserole. Bake the casserole according to the cornbread recipe and serve it while hot. Instead of making a casserole, you can also fill hot dog buns with the shredded barbeque beef and add shredded cheddar cheese to make barbeque sandwiches.
